Ingredients:
– 1 baguette, sliced
– 2 ripe avocados, peeled and pitted
– 1 tbsp lemon juice
– 1 clove garlic, minced
– 1/4 tsp salt
– 1/4 tsp black pepper
– 1 cup cherry tomatoes, halved
– 2 tbsp fresh basil, chopped
– 2 tbsp olive oil
– 1/4 cup balsamic glaze
Directions:
1. Preheat the oven to 375°F (190°C).
2. Place the baguette slices on a baking sheet and brush with 1 tbsp of olive oil.
3. Toast the baguette slices in the oven for about 10 minutes, or until golden brown.
4. In a bowl, mash the avocados with lemon juice, garlic, salt, and black pepper until smooth.
5. Spread the smashed avocado mixture onto each toasted baguette slice.
6. Top each slice with halved cherry tomatoes and chopped basil.
7. Drizzle with the remaining 1 tbsp of olive oil and balsamic glaze before serving.
