If you’re a fan of Applebee’s Chicken Fajita Rollup, but don’t want to leave the house to get it, you’re in luck! With this copycat recipe, you can make it at home.

These chicken fajita rollups are a copy cat recipe of Applebee’s famous chicken fajita rollups! It’s a large burrito with melted cheese, lettuce, pico de gallo, and chicken that has been flavored with fajita seasoning. Many of the recipes I saw online of this had a list of ingredients that was at least 20 items or longer. I used some kitchen shortcuts so all those ingredients aren’t necessary.
Ingredients Needed
- 4 Ole Extreme Wellness High Fiber Tortilla Wrap (8 in)
- Colby Jack Cheese – I like to use Reduced-Fat Cheese because it has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
- Pico de gallo is a traditional Mexican salsa that is made with fresh ingredients such as diced tomatoes, onions, jalapeño peppers, cilantro, and lime juice.
- Shredded Ice Berg lettuce –
- Cooked Shredded chicken breasts – They’re lean and quick-cooking and always come out juicy and tender. Use an instant-read thermometer to make sure that the chicken is not over cooked. When reading labels for chicken breasts try to find ones that say Organic or Free Range. If you tried this
Sauce:
- Low fat mayo – Using low fat mayo reduces calories
- Lemon juice – This adds a nice burst of citrus flavor to the marinade to help enhance the choice of protein. Use freshly squeezed over bottled juice.
- Milk – Dairy does not like me at all so I go for a lactose free milk such as Fairlife. It also has more protein in it.
- Fajita seasoning mix or Taco seasoning mix

How to make Chicken Fajita Rollups
Preheat air fryer to 350 degrees. Place the frozen chicken strips in the air fryer basket and cook for 12 minutes. Remove them from the air fryer basket and dice the chicken.
While the chicken is cooking prepare the sauce. Combine mayo, milk, lemon juice, pico de gallo, and fajita seasoning in a bowl. Stir to combine.
Heat a medium nonstick skillet and place a burrito tortilla on the grill and sprinkle cheese on top. Heat the tortilla up on the skillet until all the cheese is melted. Remove from heat.
To assemble. Add chicken to the middle of the tortilla, pico, de gallo, and lettuce. Fold in two sides and then roll it up. Cut down the center and dip it in the fajita sauce.

- 4 tablespoons of 1% milk
- 4 tablespoons of pico de Gallo
- 1 tablespoon of fajita seasoning mix
