Ingredients:
2 cups of steamed broccoli florets, finely chopped
1 cup of grated cheddar cheese
1/2 cup of low-carb breadcrumbs
2 eggs, beaten
2 tablespoons of grated Parmesan cheese
2 cloves of garlic, minced
1/4 teaspoon of onion powder
Salt and pepper to taste
Olive oil for frying
Preparation:
In a large mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, beaten eggs, Parmesan cheese, minced garlic, onion powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
Heat a small amount of olive oil in a large skillet over medium heat.
Using your hands, shape the broccoli mixture into small patties, ensuring they hold together well. Repeat with the remaining mixture.
Place the patties in the skillet, leaving space between them, and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.
