Cheesy Broccoli Chicken Divan
Ingredients:
4 chicken breasts (or 3 cups cooked chicken)
1 tbsp olive oil (for raw chicken)
1.52 lbs broccoli, cut into bitesized pieces
1.5 cups shredded cheddar cheese, divided
10.5 oz condensed cream of mushroom soup (or cream of chicken soup)
2/3 cup sour cream
1/2 cup milk
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dry mustard powder
1/2 tsp black pepper
1/4 tsp kosher salt
For the Topping:
3 tbsp Panko breadcrumbs or crushed buttery crackers (like Ritz)
1 tbsp melted butter
Directions:
1. Preheat Oven:
Heat your oven to 400°F. Grease a 9x13inch baking dish or a 3quart casserole dish.
2. Cook Chicken:
In a skillet, heat olive oil over mediumhigh heat. Cook chicken until fully cooked through, about 10 minutes. Set aside.
3. Prepare Broccoli:
Boil water in a large pot. Blanch broccoli for 23 minutes until crisptender. Drain and layer evenly in the baking dish.
4. Make Sauce:
In a large bowl, mix 1 cup cheddar cheese, condensed soup, sour cream, milk, and spices. Add cooked chicken and stir to combine. Pour this mixture over broccoli.
5. Add Topping:
Sprinkle remaining cheddar cheese over chicken mix. In a small bowl, combine breadcrumbs or crushed crackers with melted butter, then sprinkle evenly over the casserole.
6. Bake:
Bake for 2022 minutes until breadcrumbs are golden brown and casserole is bubbly.
7. Serve:
Enjoy your Broccoli Chicken Divan over rice, noodles, or mashed potatoes for a comforting meal!

For a pork substitute, use cooked shredded pork or turkey.
