Ingredients:
1 pound ground beef (substitute with turkey or lentils for a vegetarian option)
1 packet taco seasoning
1 cup shredded cheese (choose cheddar or a Mexican blend)
1 cup corn (canned or frozen)
1 cup salsa
1 cup biscuit dough (storebought or homemade)
Optional: Sour cream for topping
Optional: Chopped green onions for garnish
Optional: Sliced jalapeños for a spicy twist
Directions:
1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
2. In a skillet, brown the ground beef over medium heat. Drain any extra fat.
3. Stir in taco seasoning and the recommended water. Follow package instructions to cook.
4. Roll out the biscuit dough and cut into circles. Press each circle into the bottom and up the sides of the muffin cups.
