🌶️ Fajita Chicken Casserole – a fiesta of flavor in every bite! 🌶️
Ingredients:
1 pound chicken breasts, cooked and shredded
1 packet (1 oz) fajita seasoning mix
1 bell pepper (any color), sliced
1 onion, sliced
1 cup cooked rice
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup sour cream
1/2 cup salsa
2 tablespoons olive oil
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with olive oil.
Prepare the Chicken:
In a large bowl, toss the shredded chicken with the fajita seasoning mix until well-coated.
Cook the Vegetables:
In a skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion, cooking until they are tender and slightly caramelized, about 5-7 minutes. Set aside.
Combine the Ingredients:
In the prepared baking dish, layer the cooked rice, then top with the seasoned chicken, sautéed vegetables, salsa, sour cream, and a mix of cheddar and Monterey Jack cheeses.
Bake:
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

Serve hot, garnished with additional sour cream or fresh cilantro, if desired.
