Slow Cooker Cheesy Burger Flavored Soup

Ingredients:
1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
4 cups beef broth
2 cups diced potatoes (about 2 medium potatoes)
1 cup frozen corn
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup sour cream
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
1 teaspoon mustard
1/2 teaspoon smoked paprika (optional)
Salt and pepper to taste
1 tablespoon olive oil (for browning the beef)
Chopped green onions, for garnish (optional)
Crispy bacon bits, for garnish (optional)
Directions:
In a skillet, heat olive oil over medium heat and cook the ground beef until browned. Add diced onion and minced garlic, cooking until the onion is softened. Drain any excess fat.
Transfer the cooked beef mixture to a slow cooker. Add beef broth, diced potatoes, frozen corn, Worcestershire sauce, ketchup, mustard, and smoked paprika (if using).
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
About 30 minutes before serving, stir in cheddar cheese, mozzarella cheese, and sour cream. Mix well to ensure a creamy, cheesy texture.
Taste and season with salt and pepper as needed. Let the cheese melt fully into the soup.
Serve hot, garnished with chopped green onions and crispy bacon bits, if desired.
