Who doesn’t love a hearty plate of Fried Potatoes, Onions, and Smoked Polish Sausage? Here’s how to whip up this comforting dish:
Ingredients:
• 1½ pounds of russet potatoes, diced into 1/2″ cubes
• 1 pound of sliced smoked sausage
• 2 tablespoons of olive oil
• ½ teaspoon of seasoned salt
• ½ teaspoon of Italian seasoning
• ½ large red bell pepper, diced
• ½ large green bell pepper, diced
• 1 small onion, diced
• Black pepper, to taste
• Shredded parmesan cheese, for garnish
Instructions:
1. Start by sautéing the diced onion in a bit of butter over medium heat until it turns translucent and soft. Set the cooked onion aside for later.
2. In a large skillet, melt 1 tablespoon of butter with 1 tablespoon of olive oil. Add the diced potatoes along with the seasoned salt, Italian seasoning, and black pepper. Cover and let it simmer, turning occasionally, for about 15 minutes until the potatoes start to soften.
3. Once the potatoes are slightly softened, add in the sliced smoked sausage. Cook for an additional 10 minutes until both the potatoes and sausage are nicely browned and cooked through.
4. In another skillet, sauté the diced peppers until they’re soft and slightly crisp.
