Ingredients:
1 lb beef steak (sirloin or ribeye), cut into cubes
1 lb shrimp, peeled and deveined
1 bell pepper, cut into chunks
1 red onion, cut into chunks
2 tablespoons olive oil
Salt and pepper to taste
Wood or metal skewers
For Chimichurri Sauce:
1 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons red wine vinegar
2 garlic cloves, minced
1 teaspoon red pepper flakes
Salt and pepper to taste
Directions:
Preheat the Grill: Begin by preheating your grill to medium-high heat to ensure the skewers get a nice char and the ingredients cook evenly.
Prepare the Beef: Cut the beef steak into 1-inch cubes. In a bowl, toss the beef cubes with olive oil, salt, and black pepper until fully coated.
Assemble the Skewers: Thread the seasoned beef, shrimp, bell pepper, and onion onto the skewers, alternating the ingredients for a colorful presentation and balanced flavor.
Grill the Skewers: Place the skewers on the grill and cook for approximately 8-10 minutes, turning occasionally. Grill until the beef reaches your desired doneness and the shrimp are cooked through and opaque.
Make the Chimichurri Sauce: While the skewers are grilling, prepare the chimichurri sauce. In a mixing bowl, combine the chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, and season with salt and pepper. Mix well until combined.
Serve & Enjoy: Once cooked, remove the skewers from the grill. Serve them hot, drizzled generously with chimichurri sauce for a burst of flavor. Enjoy this delightful combination of surf and turf!
