Shrimp, corn, potatoes and smoked sausage leaf packs
Ingredients :
1/2 lb shrimp, peeled and deveined
1/2 lb sliced smoked sausage
4 little red potatoes, scattered
2 stalks of corn cut into thirds
2 tablespoons of melted butter.
2 minced garlic cloves
1 tablespoon of Old Bay seasoning
1 teaspoon of paprika
Salt and pepper to taste
1 lemon in slices
Fresh parsley for garnish (optional)

Preheat your oven to 400°F (200°C) or preheat your grill over medium-high heat.
In a large bowl, combine shrimp, smoked sausage, potatoes and corn. Drizzle in melted butter and add minced garlic, Old Bay seasoning, paprika, salt and pepper. Toss to coat everything evenly.
Rip out 4 large sheets of heavy aluminum paper (approximately 12×12 inches). Divide the shrimp mixture evenly between the foil sheets. Place a slice of lemon on every packet.
Fold the sides of the aluminum foil onto the ingredients, sealing the packages well.
Place the tin foil packets on a baking tray (if you’re using an oven) or directly onto the grids. Bake 20-25 minutes in the oven or 15-20 minutes on the grill, or until potatoes are tender and shrimp are cooked through.
Serve: Open tinfoil packages carefully (be careful of steam). Top with fresh parsley if desired, and serve hot with extra lemon wedges on the side.
