Protein Cookies
Soft, chewy, protein-packed cookies perfect for a post-workout snack or guilt-free treat.
Ingredients:
1 cup creamy peanut butter (or almond butter)
1/2 cup protein powder (vanilla or chocolate)
1/2 cup old-fashioned oats (or oat flour)
1/4 cup honey or maple syrup
1 large egg
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
Pinch of salt
Optional mix-ins:
1/4 cup chocolate chips or chopped nuts
1 tablespoon chia seeds or flaxseeds
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine peanut butter, honey, egg, and vanilla extract until smooth.
Add protein powder, oats, baking soda, and salt. Mix until a dough forms. Adjust texture with more oats or protein powder if needed.
Fold in any desired mix-ins like chocolate chips, nuts, or seeds.
Scoop 1-2 tablespoons of dough for each cookie, roll into balls, and flatten on the baking sheet.
Bake for 8-10 minutes until the edges are set. Cookies will firm up as they cool.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
