Garlic Shrimp & Sausage Veggie Skillet
Ingredients
- 1 lb shrimp, peeled and deveined
- 8 oz smoked sausage, sliced (turkey sausage for lower points)
- 2 cups bell peppers, sliced (any color)
- 1 cup zucchini, sliced
- 1 cup broccoli florets
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sausage and cook until browned, about 5 minutes.
- Add garlic and sauté for 1 minute until fragrant.
- Stir in the shrimp and cook until they turn pink, about 3-4 minutes.
- Add the vegetables (bell peppers, zucchini, broccoli) and season with paprika, salt, and pepper. Cook until veggies are tender, about 5-7 minutes.
- Garnish with parsley before serving.
