Layered Zucchini Ricotta Melts with Marinara

Ingredients

  • For the Zucchini Layers:
    • 2 medium zucchinis, sliced into 1/4-inch rounds
    • Salt and pepper to taste
    • Olive oil spray
  • For the Ricotta Mixture:
    • 1 cup part-skim ricotta cheese
    • 1/2 cup grated Parmesan cheese
    • 1 egg
    • 1 teaspoon Italian seasoning
    • 1/4 teaspoon garlic powder
    • Salt and pepper to taste
  • For the Marinara Sauce:
    • 2 cups marinara sauce (store-bought or homemade)
    • Fresh basil leaves for garnish (optional)

Instructions

  1. Prepare the Zucchini:
    • Preheat your oven to 375°F (190°C).
    • Arrange the zucchini slices on a baking sheet. Spray lightly with olive oil and season with salt and pepper.
    • Bake for about 15 minutes until slightly tender. Remove from the oven and let cool.
  2. Make the Ricotta Mixture:
    • In a bowl, combine the ricotta cheese, Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
  3. Assemble the Melts:
    • In a baking dish, spread a layer of marinara sauce on the bottom.
    • Layer half of the zucchini slices over the sauce.
    • Spread half of the ricotta mixture over the zucchini.
    • Repeat the layers: marinara, zucchini, and ricotta.
    • Finish with a final layer of marinara sauce on top.
  4. Bake:
    • Cover the dish with foil and bake for 25 minutes.
    • Remove the foil and bake for an additional 10 minutes, until the top is bubbly and golden.
  5. Serve:
    • Let it cool slightly before slicing. Garnish with fresh basil if desired.
