π¨βπ³Β Instructions:
STEP 1: SAUTΓ THE BASE
In a large pot, melt butter with olive oil over medium heat. Add onions, garlic, celery, and carrots. SautΓ© until soft and fragrant, about 5β7 minutes.
STEP 2: BUILD THE BISQUE
Stir in flour and cook for 1β2 minutes to eliminate the raw taste. Slowly pour in white wine (if using), stirring constantly, and cook for another 2β3 minutes.
STEP 3: ADD LIQUIDS
Gradually add the seafood stock while stirring. Bring to a gentle simmer. Add milk, cream, Old Bay, paprika, salt, and pepper. Simmer on low heat for 15 minutes.
STEP 4: BLEND (OPTIONAL)
For a smooth bisque, use an immersion blender or regular blender to puree the soup base until silky (skip if you prefer chunky texture).
STEP 5: ADD SEAFOOD
Add in the crab, shrimp, and lobster. Stir gently and cook until heated through, about 5 minutes.
STEP 6: SERVE
Ladle into bowls, garnish with fresh parsley and a drizzle of cream if desired. Serve with crusty bread or oyster crackers.
