Apple Carrot Pork Rib Soup Recipe
Ingredients:
1 lb pork ribs, cut into 1-inch pieces
2 medium carrots, peeled and chopped
2 apples, peeled, cored, and chopped
1/2 teaspoon salt or to taste
8 cups water
2 slices ginger
chopped scallions for garnish
Instructions:
Wash the pork ribs and blanch them in boiling water for a few minutes to remove any impurities.
Rinse the ribs under cold water and drain.
In a large pot over high heat, combine the pork ribs, carrots, apples, salt, ginger slices, and water.
Bring the mixture to a boil.
Reduce the heat to medium and simmer for 1 to 2 hours, or until the soup reduces to about 8 cups of liquid and the pork ribs are tender.
Skim off any fat from the surface of the soup.
garnish with chopped scallions
Serve hot.
