Honey Roasted Sweet Potatoes with Feta & Pecans

Ingredients

  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper, to taste
  • 1/2 cup pecans, chopped
  • 1/3 cup feta cheese, crumbled
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Sweet Potatoes: In a large bowl, toss the sweet potato cubes with olive oil, honey, salt, and pepper until well coated.
  3. Roast the Sweet Potatoes: Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until they are tender and caramelized, stirring halfway through.
  4. Add Pecans and Thyme: In the last 5 minutes of roasting, add the chopped pecans to the baking sheet to toast them lightly.
  5. Combine and Serve: Once the sweet potatoes are done, remove them from the oven and sprinkle with crumbled feta cheese and fresh thyme. Toss gently to combine.
  6. Enjoy: Serve warm as a side dish or a light main course.
