Ingredients
- 2 medium sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons honey
- Salt and pepper, to taste
- 1/2 cup pecans, chopped
- 1/3 cup feta cheese, crumbled
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C).
- Prepare the Sweet Potatoes: In a large bowl, toss the sweet potato cubes with olive oil, honey, salt, and pepper until well coated.
- Roast the Sweet Potatoes: Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until they are tender and caramelized, stirring halfway through.
