Garlic Lemon Roasted Cauliflower Bites
Ingredients:
1 head cauliflower, cut into florets
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon lemon zest
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, toss the cauliflower florets with olive oil, minced garlic, lemon zest, lemon juice, salt, and black pepper until well coated.
Spread the cauliflower in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, stirring halfway through.
Serve hot as a delicious and healthy snack or side dish.

Tips:
For an extra kick of flavor, sprinkle some grated Parmesan cheese over the roasted cauliflower before serving.
