Cheesy Spinach Ricotta Ring 🧀🌿
Flourless, high protein, and so easy.
You’ll Need
• Sliced melting cheese to line the pan
• 1 bunch spinach, cooked and squeezed dry
• 2 cups ricotta
• 3 large eggs
• 1/2 cup grated Parmesan + a little extra
• Pinch salt, pepper, and a tiny bit of garlic powder
How to make it
1. Grease a 9.5 inch ring or bundt pan. Line the bottom and sides with the cheese slices so there are no gaps.
2. In a bowl, mix spinach, ricotta, eggs, Parmesan, salt, and pepper.
3. Pour the mix into the cheese lined pan. Smooth the top. Sprinkle more Parmesan.
4. Cook covered on low medium heat in a snug pot for 20 minutes, or bake at 350°F for 25–30 minutes until set.
5. Rest 5 minutes. Flip onto a plate and lift off the pan. Slice and enjoy warm, or chill and reheat later.

Tip
• Want extra protein and cream? Swap half the ricotta with cottage cheese.
