Confectioners’ Sugar 1/2 cup
Vanilla Extract 1 tsp
Sweetened Shredded Coconut 2 cups
Unsalted Butter (melted) 1/4 cup
Pinch of Salt 1 pinch
Instructions
* In a large bowl, beat the softened cream cheese until smooth and creamy.
* Gradually mix in the confectioners’ sugar, continuing to beat until fully combined.
* Stir in the vanilla extract for a fragrant, sweet flavor.
* Fold in 1 cup of the shredded coconut into the cream cheese mixture.
* Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up the mixture.
* After chilling, scoop small portions and roll them into bite-sized balls.
* In another bowl, combine the remaining 1 cup of shredded coconut with melted butter and a pinch of salt.
* Roll each cream cheese ball in the coconut-butter mixture until fully coated.
* Place the coated snowballs on a parchment-lined tray and refrigerate for another 15–20 minutes to set.
* Once set, serve and enjoy the creamy, coconutty goodness of your NO-BAKE Snowballs!
