This meal’s got that cozy-home-cooked magic. Juicy chicken, crispy-edged broccoli, roasted rainbow potatoes, and sweet baby carrots β€” it’s hearty, wholesome, and crazy satisfying.
𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬:
1 boneless, skinless chicken breast
1 cup mixed baby potatoes (red, yellow, purple), halved
1/2 cup baby carrots
1 cup broccolini or broccoli florets
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp smoked paprika
Salt & black pepper to taste

Prep the Veggies:
Toss potatoes and carrots in olive oil, garlic powder, salt, and pepper. Roast at 425Β°F (220Β°C) for 25–30 minutes or until tender and golden.
Cook the Chicken:
Rub chicken with olive oil, paprika, salt, and pepper. Bake or pan-sear until fully cooked (internal temp 165Β°F), about 15–20 minutes depending on thickness. Let rest, then slice.
SautΓ© the Broccolini:
Lightly char in a hot skillet with olive oil and garlic for 4–5 minutes until crisp-tender. Season lightly.
Assemble the Plate:
Layer sliced chicken, roasted carrots and potatoes, and sautΓ©ed broccolini on a plate. Optional: drizzle with fresh lemon juice or a dollop of herbed yogurt sauce.
