These Greek-style chicken tenders are marinated in lemon, garlic, and herbs, then coated for extra crispiness and baked or air-fried to perfection. A healthier alternative to fried chicken with bold Mediterranean taste.


Ingredients (Serves 4)

For the Marinade

  • 1½ lbs chicken tenders (or sliced chicken breasts)

  • 3 tbsp olive oil

  • Juice of 1 large lemon

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • ½ tsp paprika

  • ½ tsp salt

  • ½ tsp black pepper

For the Crispy Coating

  • 1 cup panko breadcrumbs

  • ½ cup grated Parmesan cheese

  • 1 tsp dried oregano

  • ½ tsp garlic powder

  • ½ tsp paprika

  • 1 large egg, beaten


Instructions

  1. Marinate the Chicken
    In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
    Add chicken tenders and marinate for 20–30 minutes (or up to 2 hours).

  2. Prepare the Coating
    In one bowl, beat the egg.
    In another bowl, mix panko, Parmesan, oregano, garlic powder, and paprika.

  3. Coat the Chicken
    Dip each tender into egg, then coat well with breadcrumb mixture, pressing gently.

  4. Bake (Oven Method)

    • Preheat oven to 425°F (220°C).

    • Place tenders on a lined baking sheet.

    • Lightly spray or drizzle with olive oil.

    • Bake 18–22 minutes, flipping halfway, until golden and cooked through.

    OR Air Fry

    • Air fry at 400°F (200°C) for 12–15 minutes, flipping once.

  5. Serve
    Rest 2 minutes before serving. Garnish with fresh parsley and lemon wedges.
