Chicken Meatballs with Creamy Ranch Sauce
Ingredients:
For the Meatballs:
– 1 lb ground chicken
– 1 large egg
– 1 cup breadcrumbs (or panko)
– ¼ cup grated Parmesan cheese
– 2 cloves garlic, minced
– 1 tsp dried oregano
– 1 tsp dried parsley
– ½ tsp salt
– ¼ tsp black pepper
– 2 tbsp olive oil (for cooking)
For the Creamy Ranch Sauce:
– 1 cup ranch dressing
– ¼ cup sour cream
– 1 tbsp lemon juice
– 1 tsp garlic powder
– ½ tsp dried dill (optional)
– Fresh parsley, chopped (for garnish)
Instructions:
1. Prepare the Meatballs:
In a large bowl, combine the ground chicken, egg, breadcrumbs, grated Parmesan cheese, minced garlic, oregano, parsley, salt, and pepper. Mix everything together until well combined.
2. Form the Meatballs:
Shape the mixture into 1-inch meatballs and set aside.
3. Cook the Meatballs:
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the meatballs and cook for about 6-8 minutes, turning them occasionally until they are golden brown and fully cooked (internal temperature should reach 165°F/74°C).
4. Prepare the Creamy Ranch Sauce:
While the meatballs are cooking, in a small bowl, combine the ranch dressing, sour cream, lemon juice, garlic powder, and dried dill (if using). Stir until smooth and well mixed.
5. Serve:
Once the meatballs are cooked, remove them from the skillet and serve with the creamy ranch sauce. Garnish with fresh parsley.
