7-Minute Frosting
This classic 7-Minute Frosting is fluffy, glossy, and cloud-like—perfect for topping cakes, cupcakes, or old-fashioned desserts. Made with simple pantry ingredients, it whips up into a light marshmallow-style frosting that spreads beautifully and sets quickly with a delicate sheen. It’s ideal for layer cakes, especially when you want something airy rather than heavy buttercream. Best of all, it truly comes together in just minutes.
Ingredients
1 ½ cups sugar
⅓ cup cold water
2 egg whites
Pinch of salt
1 teaspoon vanilla extract
½ teaspoon cream of tartar
Directions
In a medium heatproof (glass or metal) bowl, combine sugar, water, cream of tartar, egg whites, and salt.
Bring a pot of water to a simmer and place the bowl over it, creating a double boiler.
Beat the mixture on low for 30 seconds, then increase to high and continue beating over simmering water until thick, glossy, and stiff—about 7 minutes.
Remove from heat, add vanilla extract, and beat 2 more minutes until fully blended.
Use immediately, as the frosting sets quickly.

Tips
Make a double batch for frosting a full layer cake—it doubles perfectly in one bowl.
For the fluffiest texture, be sure the steam is steady but not boiling vigorously under the bowl.
FAQ
Can I use a stainless steel bowl?
Yes—glass or stainless steel both work well for double-boiler whipping.
Will this frosting harden?
It forms a soft, slightly firm outer shell but stays marshmallowy inside.
Can I make it ahead?
It’s best used immediately; it doesn’t hold well for long storage.
Can I flavor it differently?
Absolutely—try almond, lemon, or coconut extract in place of vanilla.
Is cream of tartar required?
It stabilizes the egg whites; if omitted, the frosting may not whip as firmly.
