Tender grilled zucchini wrapped around a creamy lemon-basil ricotta filling. Bright, herby, and elegant with minimal effort.


Ingredients (Serves 4)

Zucchini

  • 3 medium zucchini, sliced lengthwise

  • 1–2 tbsp olive oil

  • Salt & black pepper

Lemon-Basil Ricotta

  • 1 cup ricotta cheese

  • Zest of 1 lemon

  • 1–2 tbsp lemon juice

  • 2 tbsp fresh basil, finely chopped

  • 1 small garlic clove, grated

  • Salt & pepper to taste

Optional Garnish

  • Balsamic glaze

  • Crushed red pepper

  • Grated Parmesan


Instructions

  1. Grill Zucchini
    Brush zucchini slices with olive oil, season lightly, and grill over medium heat 2–3 minutes per side until tender with grill marks. Cool slightly.

  2. Make Filling
    In a bowl, mix ricotta, lemon zest, lemon juice, basil, garlic, salt, and pepper until smooth.

  3. Assemble Rollups
    Spread a thin layer of ricotta on each zucchini slice and roll up tightly.

  4. Serve
    Arrange on a platter, drizzle with balsamic glaze if desired, and garnish.


Tips & Variations

  • Use whipped ricotta for extra creaminess

  • Make it vegan with almond-milk ricotta

  • Add sun-dried tomatoes to the filling for depth
