A classic Italian-style soup made with creamy white beans, vegetables, garlic, herbs, and a touch of olive oil. Simple, nourishing, and deeply flavorful.


Ingredients (Serves 4–6)

  • 2 tbsp olive oil

  • 1 small onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 3 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • ¼ tsp chili flakes (optional)

  • 2 cans (15 oz each) cannellini or great northern beans, drained & rinsed

  • 4 cups vegetable or chicken broth

  • 1 can (14 oz) diced tomatoes (optional but traditional)

  • 2 cups fresh spinach or kale

  • Salt & black pepper to taste

  • Grated Parmesan & parsley for serving


Instructions

  1. Heat olive oil in a pot over medium heat.

  2. Sauté onion, carrots, and celery until soft (5–6 minutes).

  3. Add garlic, thyme, rosemary, and chili flakes; cook 30 seconds.

  4. Stir in beans, broth, and tomatoes. Simmer 15 minutes.

  5. Lightly mash some beans in the pot for thickness.

  6. Add spinach, season, and simmer 2–3 minutes.


Serving Suggestions

  • With crusty bread 🥖

  • Drizzled with extra olive oil

  • Topped with Parmesan
