A cozy, holiday-ready bowl with caramelized roasted sweet potatoes, creamy whipped feta, tart cranberries, and crunchy pistachios. Perfect as a Christmas side or a vegetarian main.


Ingredients (Serves 4)

Sweet Potatoes

  • 3 medium sweet potatoes, cubed

  • 2 tbsp olive oil

  • ½ tsp smoked paprika

  • ½ tsp cinnamon

  • Salt & black pepper to taste

Whipped Feta

  • 1 cup feta cheese

  • ½ cup Greek yogurt

  • 1 tbsp olive oil

  • 1 tsp lemon juice

Toppings

  • ¼ cup dried cranberries

  • ¼ cup chopped pistachios

  • Fresh parsley or thyme

  • Optional drizzle: honey or balsamic glaze


Instructions

  1. Roast Sweet Potatoes
    Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, paprika, cinnamon, salt, and pepper. Roast 25–30 minutes until golden.

  2. Make Whipped Feta
    Blend feta, Greek yogurt, olive oil, and lemon juice until smooth and creamy.

  3. Assemble Bowl
    Spread whipped feta on the base of a serving bowl.

  4. Add Potatoes
    Top with warm roasted sweet potatoes.

  5. Finish
    Sprinkle cranberries, pistachios, and herbs. Drizzle honey if desired.

  6. Serve
    Serve warm or at room temperature.
