A One-Pan Roasted Veggie & Potato Traybake is a simple, healthy meal where everything cooks together on one sheet pan. It’s packed with roasted potatoes, colorful vegetables, and herbs, making it perfect for an easy dinner or meal prep.

🧾 Ingredients
3 cups baby potatoes, halved

1 bell pepper, chopped

1 zucchini, sliced

1 cup broccoli florets

1 red onion, sliced

2 tbsp olive oil

1 tsp garlic powder

1 tsp Italian seasoning

½ tsp paprika

Salt & black pepper to taste

Optional: grated Parmesan or feta

1️⃣ Preheat Oven
Preheat oven to 400°F (200°C).

2️⃣ Prepare Vegetables
Place potatoes, bell pepper, zucchini, broccoli, and onion on a large baking tray.
