Easy Zero Point Stuffed Pepper Soup
Ingredients
1 lb Lean Ground Turkey
1 large Onion (diced)
2 cloves Garlic (minced)
3 Bell Peppers (red, yellow, green – chopped)
1 can Diced Tomatoes (15 oz)
1 can Tomato Sauce (15 oz)
4 cups Vegetable Broth or beef broth
1 cup cooked Brown Rice
1 tsp Dried Oregano
1 tsp Dried Basil
Salt and pepper to taste
Fresh Parsley for garnish
Instructions
In a large pot, cook the lean ground turkey over medium heat until browned.
Add diced onion and garlic. Cook for 2–3 minutes until fragrant.
Stir in chopped bell peppers and cook for 3–4 minutes.
Pour in diced tomatoes, tomato sauce, and broth. Mix well.
Add oregano, basil, salt, and pepper.
Let the soup simmer for 15–20 minutes so flavors combine.
Stir in cooked brown rice and heat for 5 minutes.
serve hot and garnish with fresh parsley.
