Spinach and Cheese Stuffed Pastries

Ingredients
2 sheets puff pastry (thawed)
2 cups fresh spinach, chopped
1 cup ricotta cheese
½ cup feta cheese, crumbled
½ cup mozzarella cheese, shredded
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
1 egg (for egg wash)
½ tsp salt
½ tsp black pepper
½ tsp dried oregano
¼ tsp nutmeg (optional)
Sesame seeds (optional)

Instructions

Cook the spinach
Heat olive oil in a pan over medium heat. Add onion and sauté until soft and translucent. Add garlic and cook for about 30 seconds.
Add chopped spinach and cook until wilted and all excess moisture evaporates. Remove from heat and let it cool.
Make the filling
In a bowl, combine the spinach mixture with ricotta, feta, mozzarella, salt, pepper, oregano, and nutmeg. Mix until smooth and well combined.
Prepare the pastry
Roll out puff pastry sheets and cut into equal squares or rectangles.
Assemble
Place a spoonful of filling in the center of each piece. Fold into triangles or rectangles and press edges with a fork to seal tightly.
Egg wash
Brush the tops with beaten egg and sprinkle sesame seeds if desired.
Bake
Preheat oven to 200°C (390°F). Bake for 18–22 minutes or until golden, puffed, and crispy.
