Ingredients:
* 6–8 roasted green chiles (peeled, seeded)
* 2 cups shredded Monterey Jack cheese
* 1 cup shredded cheddar cheese
* 4 eggs
* 1 cup milk
* 1/2 cup all-purpose flour
* 1 tsp baking powder
* 1/2 tsp garlic powder
* Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F (190°C).
2. Lightly grease a baking dish.
3. Layer half of the roasted chiles on the bottom.
4. Sprinkle half of the cheeses over the chiles.
5. Repeat with remaining chiles and cheese.
6. In a bowl, whisk together eggs, milk, flour, baking powder, garlic powder, salt, and pepper.
7. Pour the mixture evenly over the layered chiles and cheese.
8. Bake for 30–35 minutes until set and golden on top.
9. Let cool slightly before slicing and serving.
