Ingredients:
* 2 zucchini (calabacitas), diced
* 1 cup corn kernels (fresh, canned, or frozen)
* 1/2 onion, chopped
* 2 garlic cloves, minced
* 1 tomato, diced
* 1 cup shredded cheese (cheddar or Mexican blend)
* 1 tbsp oil
* Salt and pepper to taste
Instructions:
1. Heat oil in a large pan over medium heat.
2. Sauté onion until soft, then add garlic and cook until fragrant.
3. Add diced zucchini and cook for about 5 minutes until slightly tender.
4. Stir in corn and tomato, cooking for another 5 minutes.
5. Season with salt and pepper.
6. Sprinkle cheese over the top and cover until melted and gooey.
7. Serve warm as a side dish or with tortillas.
