These mini chicken meatloaves are tender, cheesy, and packed with garlic-parmesan flavor—lighter than classic beef meatloaf but just as comforting.
📝 Ingredients (Serves 4 | Makes 4 mini loaves)
Meatloaf
500 g (1 lb) ground chicken
½ cup grated Parmesan cheese
½ cup breadcrumbs (or oat crumbs)
1 egg
3–4 cloves garlic, minced
ÂĽ cup milk (or unsweetened almond milk)
2 tbsp olive oil or melted butter
1 tsp Italian seasoning
½ tsp paprika
½ tsp onion powder
Salt & black pepper, to taste
2 tbsp fresh parsley, chopped (optional)
Garlic Parmesan Topping (optional but recommended)
2 tbsp melted butter
2 tbsp grated Parmesan
1 clove garlic, finely grated
👩‍🍳 Instructions
Preheat oven to 190°C / 375°F. Line a baking tray or lightly grease a loaf pan.
Mix gently: In a large bowl, combine all meatloaf ingredients. Mix just until combined—don’t overwork.
Shape: Form into 4 mini loaves (or one large loaf) and place on the tray.
Top: Mix topping ingredients and brush over the loaves.
Bake:
Mini loaves: 22–25 minutes
One large loaf: 35–40 minutes
Until internal temp reaches 165°F / 74°C.
Rest & serve: Let rest 5 minutes before serving.
