227 g of softened cream cheese
1 1/2 cups (300 g) of sugar
1 1/2 teaspoons of vanilla extract
4 large eggs
2 cups (240 g) of flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of salt
2 cups (200 g) of fresh or frozen cranberries
1/2 cup (60 g) of chopped pecans (optional)
Preparation:
Preheat the oven:
Preheat the oven to 175°C. Grease and flour a 23×13 cm loaf pan or line it with parchment paper.
Beat the butter and cream cheese:
In a large bowl, beat the softened butter and cream cheese until they become very creamy. This should take about 3-4 minutes.
Add the sugar and vanilla:
Add the sugar and vanilla extract to the mixture and continue beating until well combined and fluffy.
Add the eggs:
