1½ cups hummus
1 cucumber, diced
1 cup cherry tomatoes, halved
½ small red onion, thinly sliced
½ cup Kalamata olives, pitted
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped
2 tbsp fresh mint, chopped
1–2 tbsp toasted sesame seeds, optional

Simple Lemon Dressing
3 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
1 tbsp red wine vinegar
1 small garlic clove, finely minced
½ tsp dried oregano
¼ tsp salt
¼ tsp black pepper
Instructions

  1. Marinate the Chicken

Add the chicken pieces to a large bowl.

Add olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, pepper, thyme, and onion powder. Toss until the chicken is evenly coated.
