Fresh, colorful, and filling, this Mediterranean-inspired orzo salad combines tender pasta, protein-rich chickpeas, crunchy vegetables, feta, olives, and a bright lemon-herb dressing. It’s perfect for lunch, meal prep, picnics, or as a side dish.

Ingredients
For the Salad
1½ cups dry orzo
1 can (15 oz / 425 g) chickpeas, drained and rinsed
1½ cups cherry tomatoes, halved
1 cucumber, diced
½ small red onion, finely sliced
½ cup Kalamata olives, halved
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped
2 tbsp fresh dill, chopped
2 tbsp fresh mint, chopped
½ cup roasted red peppers, chopped
2 cups baby spinach, roughly chopped (optional)
Lemon-Herb Dressing
⅓ cup extra-virgin olive oil
3 tbsp fresh lemon juice
1 tbsp red wine vinegar
1 garlic clove, finely minced
1 tsp dried oregano
½ tsp Dijon mustard
½ tsp honey or maple syrup
½ tsp salt
¼ tsp black pepper
Instructions

  1. Cook the Orzo

Bring a large pot of salted water to a boil.

Add the orzo and cook according to the package directions, usually 8–10 minutes, until al dente.

Drain well and rinse briefly under cool water to stop the cooking process. Let it drain completely.

Tip: Toss the warm orzo with 1 teaspoon of olive oil to prevent it from sticking together.

  1. Prepare the Vegetables

While the orzo cooks, prepare the vegetables.

Dice the cucumber, halve the tomatoes and olives, slice the red onion, chop the roasted peppers, and roughly chop the herbs.

  1. Make the Dressing

In a small bowl or jar, combine olive oil, lemon juice, red wine vinegar, garlic, oregano, Dijon mustard, honey, salt, and black pepper.

Whisk or shake vigorously until well combined.

Taste and adjust the lemon juice, salt, or pepper as desired.

  1. Assemble the Salad

Add the cooled orzo to a large mixing bowl.

Add chickpeas, tomatoes, cucumber, red onion, Kalamata olives, roasted red peppers, parsley, dill, and mint.

Add the feta cheese and optional spinach.

  1. Add the Dressing

Pour the dressing over the salad and gently toss until everything is evenly coated.

  1. Chill & Serve

For the best flavor, refrigerate the salad for 20–30 minutes before serving.

Give it another gentle toss before serving. Add a little extra lemon juice or olive oil if needed.

Recipe Q&A

Q: Can I make this salad ahead of time?
Yes. It is actually even more flavorful after the ingredients have had time to absorb the dressing. Prepare it up to 1 day ahead and refrigerate.

Q: How long does Mediterranean orzo salad last?
Store it in an airtight container in the refrigerator for 3–4 days.

Q: Can I use canned chickpeas?
Yes. Drain and rinse them thoroughly before adding them to the salad.

Q: Can I use another type of pasta?
Absolutely. Small pasta shapes such as couscous, ditalini, small shells, or gluten-free pasta can work well.

Q: Can I make this gluten-free?
Yes. Simply replace traditional orzo with certified gluten-free orzo or another gluten-free small pasta.

Q: Can I add protein?
Yes. Grilled chicken, salmon, shrimp, tuna, hard-boiled eggs, or extra chickpeas all work well.

Q: Can I make it dairy-free?
Yes. Leave out the feta or use dairy-free feta.

Q: Can I make it vegan?
Yes. Omit feta or use vegan feta and replace honey with maple syrup.

Q: Can I add avocado?
Yes. Diced avocado is delicious in this salad. Add it just before serving so it stays fresh.

Q: Can I use fresh herbs instead of dried oregano?
Yes. Fresh oregano works beautifully. Use about 1 tablespoon finely chopped fresh oregano.

Q: What can I use instead of Kalamata olives?
Green olives, black olives, or another Mediterranean olive variety can be substituted.

Q: Can I add nuts?
Yes. Toasted pistachios, almonds, walnuts, or pine nuts are excellent additions.

Q: Is this salad good for meal prep?
Yes. Keep it refrigerated in sealed containers. For the freshest texture, you can keep the dressing separate and add it just before eating.

Q: Why does my orzo salad become dry after refrigeration?
Orzo absorbs dressing as it sits. Simply add a small splash of olive oil and lemon juice, then toss before serving.

Q: Can I serve it warm?
Yes. Although it is traditionally served chilled or at room temperature, it can also be served slightly warm for a heartier meal.
