Ingredients
1. 4 boneless, skinless chicken breasts
2. 1 cup breadcrumbs
3. 1/2 cup grated Parmesan cheese
4. 1 teaspoon garlic powder
5. 1 teaspoon Italian seasoning
6. 1/4 cup chopped fresh basil
7. 2 eggs
8. Salt and pepper, to taste
9. Olive oil, for frying
Instructions
1. Prepare chicken: Pound chicken breasts to an even thickness.
2. Prepare breading station: In one shallow dish, mix together breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning. In another dish, beat eggs.
3. Bread chicken: Dip each chicken breast in beaten eggs, then coat in breadcrumb mixture, pressing gently to adhere.
4. Fry chicken: Heat about 1/2 inch (1 cm) of olive oil in a large skillet over medium-high heat. Fry breaded chicken cutlets until golden brown and cooked through, about 3-4 minutes per side.
5. Garnish with basil: Sprinkle chopped fresh basil over fried chicken cutlets.
6. Serve: Serve hot with your favorite sides, such as pasta, marinara sauce, or a green salad.
