Ingredients:
* 2 pounds of small potatoes (such as Yukon Gold or baby red potatoes)
* 3 tablespoons olive oil
* 2 cloves garlic, minced
* 1 teaspoon dried thyme
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* Optional: fresh parsley, chopped, for garnish
Instructions:
1. Preheat Oven and Prep Potatoes: Preheat your oven to 400°F (200°C). Wash the potatoes and cut them into halves or quarters, depending on their size, so they are roughly the same size.
2. Toss with Oil and Seasonings: In a large bowl, toss the potatoes with the olive oil, minced garlic, dried thyme, salt, and pepper. Make sure the potatoes are evenly coated.
3. Roast: Spread the potatoes in a single layer on a baking sheet. Roast for 30-40 minutes, or until the potatoes are tender and golden brown, flipping them halfway through for even cooking.
4. Serve: Garnish with fresh parsley, if desired, and serve hot. Enjoy!
