Instructions

  1. Sauté these items;
  2. 1/4 cup chopped red pepper
  3. 1/4 cup chopped red onion
  4. Small handful of chopped kale
  5. 1 clove (minced) garlic
  6. 1 tbs diced ginger
  7. Mix the sautéed ingredients with 1/2 can of refried beans, 1/4 cup of chopped fresh cilantro and a squeeze of 1/4 lime.
  8. Roll ‘em up in 10 spring roll pastry sheets and spritz with a bit of cooking spray.
  9. Air fry at 400 degrees for 8 mins, flipping once.
  10. Dip; 1 avocado mashed, 2 tbs plain Greek yogurt and a squeeze of 1/4 lime. Sprinkle of chili flakes.
