1/2 cup butter
2/3 cup sweetener
1 egg
2/3 cup ricotta cheese
2 tsp vanilla extract
1 tsp almond extract
2 cups almond flour
1 tsp baking powder
1/2 tsp baking soda
2 tbsp almond milk
1/2 cup powdered sweetener
1/2 tsp almond extract
Preheat oven to 350.
Cream together butter, sweetener, egg, ricotta cheese and extracts.
In a separate bowl, combine almond flour, baking powder and baking soda.
Add dry ingredients to the creamed mixture until a dough forms.
Drop dough with a cookie scoop onto a lined baking sheet. Freeze the dough for 10-15 min before baking to prevent flat cookies.
Bake 15-18 min until lightly browned. Allow to cool on the baking sheet for 15 min before removing.
Store in the fridge.
For the icing, stir together all ingredients. Drizzle over top cooled cookies.
