Ingredients

  • 2 cups cottage cheese (low-fat or full-fat)

  • 2 ripe bananas, mashed

  • 2 large eggs

  • ½ cup rolled oats (or oat flour)

  • 1 teaspoon cinnamon

  • ½ teaspoon baking powder

  • 1 teaspoon vanilla extract (optional)

  • Pinch of salt

Optional toppings (no added sugar):

  • Chopped walnuts or almonds

  • Chia or flax seeds

  • Extra banana slices

  • Drizzle of peanut butter


Instructions

  1. Preheat oven
    Preheat oven to 375°F (190°C) and lightly grease 4 oven-safe bowls or a baking dish.

  2. Blend mixture
    In a blender or bowl, mix cottage cheese, mashed bananas, eggs, oats, cinnamon, baking powder, vanilla, and salt until smooth.

  3. Fill bowls
    Pour mixture evenly into prepared bowls. Add toppings if using.

  4. Bake
    Bake for 25–30 minutes until set in the center and lightly golden on top.

  5. Serve
    Let cool 5 minutes and enjoy warm.
