Ingredients:
4 cod fillets (about 5–6 oz each)
3 tbsp olive oil
3 tbsp melted butter
4 cloves garlic, minced
1 lemon, thinly sliced
2 tbsp fresh parsley, chopped
1 tsp paprika
1 tsp dried oregano
1 tsp dried thyme
½ tsp crushed red pepper (optional)
Salt & black pepper, to taste
1 tbsp capers or toasted pine nuts (optional garnish)
Directions
Prep the Oven
Preheat oven to 400°F (200°C). Lightly grease a baking dish.
Season the Cod
Pat cod fillets dry. Season both sides with salt, pepper, paprika, oregano, and thyme.
Build the Flavor Base
Arrange lemon slices on the bottom of the baking dish.
Place the cod fillets on top.
Make the Butter Mixture
Mix olive oil, melted butter, garlic, and half the parsley.
Spoon evenly over the cod fillets.
Bake
Bake for 12–15 minutes, or until the fish flakes easily with a fork.
Garnish & Serve
Top with remaining parsley and optional pine nuts or capers. Serve warm with rice, vegetables, or salad.
