Ingredients:
– Fresh spinach leaves
– Eggs
– Cheese (cheddar or a similar variety)
– Onions
– Salt and pepper to taste
Directions:
1. Preheat the oven to 350°F (175°C) and grease a baking dish.
2. In a skillet, sauté the chopped onions until they are translucent.
3. Add the fresh spinach leaves to the skillet and cook until wilted.
4. In a mixing bowl, beat the eggs and season with salt and pepper.
5. Add the cooked spinach and onions to the eggs and mix well.
6. Pour the mixture into the prepared baking dish.
7. Sprinkle the shredded cheese on top.
8. Bake in the preheated oven for about 25-30 minutes, or until the eggs are set and the cheese is melted and bubbly.
9. Remove from the oven and let it cool slightly before serving.
Tips:
– You can add some cooked and crumbled beef sausage for extra flavor.
