Chicken

  • 1½ lb boneless chicken thighs (best flavor) or breast

  • 1 tbsp oil (avocado or vegetable)

Sauce

  • ½ cup low-sodium soy sauce

  • ⅓ cup brown sugar

  • ¼ cup bourbon whiskey

  • ¼ cup water

  • 2 tbsp ketchup

  • 2 tbsp apple cider vinegar

  • 1 tbsp cornstarch

  • 3 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • ½ tsp black pepper

  • Optional: red chili flakes (heat)


🔥 STEP-BY-STEP INSTRUCTIONS

STEP 1: Prepare Chicken

  • Cut chicken into bite-size pieces

  • Pat dry (important for browning)


STEP 2: Sear Chicken

  • Heat oil in a large skillet over medium-high heat

  • Add chicken in a single layer

  • Cook 5–6 minutes, flipping until golden

  • Remove chicken and set aside


STEP 3: Make Sauce

In a bowl, whisk together:

  • Soy sauce

  • Brown sugar

  • Bourbon

  • Water

  • Ketchup

  • Vinegar

  • Cornstarch

  • Garlic, ginger, pepper


STEP 4: Simmer

  • Pour sauce into skillet

  • Bring to a gentle boil

  • Reduce heat and simmer 3–4 minutes until slightly thick


STEP 5: Combine

  • Add chicken back to skillet

  • Toss to coat

  • Simmer 5–7 minutes until sticky and glossy


STEP 6: Serve

  • Garnish with green onions or sesame seeds (optional)

  • Serve over rice, cauliflower rice, or noodles
