✅ Ingredients:
1 cup grated zucchini (squeeze out excess water)
1 cup grated carrot
1 cup grated cheese (cheddar, mozzarella, or your favorite)
1 cup finely shredded cabbage
2–3 large eggs
Salt, to taste
Pepper, to taste
1–2 tbsp all-purpose flour or oat flour (optional, for better binding)
1 tbsp oil or butter (for cooking)
Optional: chopped green onions, herbs (parsley, dill), chili flakes for a kick
🔪 Instructions:
Prepare veggies:
Grate zucchini and carrot. Squeeze zucchini in a clean towel or paper towel to remove extra moisture. Shred cabbage finely.
Mix everything:
In a large bowl, combine:
Grated zucchini
Grated carrot
Shredded cabbage
Grated cheese
Eggs
Salt and pepper
Optional: 1–2 tbsp of flour if the mix feels too wet
Heat pan:
Heat oil or butter in a non-stick skillet over medium heat.
Cook the mixture:
Option 1: Pour all the mixture in to make one large omelette/frittata-style dish. Flatten slightly and cook covered for 6–8 minutes on one side, then flip and cook 3–4 more minutes.
Option 2: Make small patties or fritters for easier flipping. Cook 3–4 minutes per side until golden brown and cooked through.
Serve hot:
Great on its own or with sour cream, yogurt, or a drizzle of hot sauce.
