A low-calorie, veggie-packed soup made with cabbage, tomatoes, celery, and spices. Great for boosting metabolism and keeping you full without heaviness.


Ingredients (Serves 6–8)

  • 1 tbsp olive oil

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 1 green bell pepper, chopped

  • ½ head green cabbage, chopped

  • 1 can (14.5 oz) diced tomatoes

  • 6 cups vegetable or chicken broth

  • 1 tsp paprika

  • ½ tsp turmeric

  • ½ tsp black pepper

  • Salt to taste

  • Optional: chili flakes, parsley, lemon juice


Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Sauté onion and garlic until fragrant.

  3. Add carrots, celery, and bell pepper; cook 5 minutes.

  4. Stir in cabbage and diced tomatoes.

  5. Pour in broth and add spices.

  6. Bring to a boil, then simmer 25–30 minutes until veggies are tender.

  7. Adjust seasoning and add lemon juice if desired.

  8. Serve hot, garnished with parsley.
