Caprese Chicken Casserole
Ingredients:
2 cups cooked chicken, shredded
2 cups cherry tomatoes, halved
1 cup fresh mozzarella cheese, cubed
1/2 cup fresh basil leaves, chopped
1/4 cup balsamic vinegar
1/4 cup olive oil
1 tsp garlic powder
Salt and pepper to taste
1 cup cooked pasta (penne or rotini)
Directions:
Preheat the oven to 375°F (190°C). In a large mixing bowl, combine the shredded chicken, cherry tomatoes, mozzarella cheese, and basil.
In a separate bowl, whisk together the balsamic vinegar, olive oil, garlic powder, salt, and pepper. Pour this dressing over the chicken mixture and toss until everything is well coated.
Add the cooked pasta to the chicken mixture, stirring gently to combine all the ingredients evenly.
Transfer the mixture to a greased 9×13 inch baking dish, spreading it out evenly.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving. Garnish with additional fresh basil if desired.
