Ingredients

  • 2 lbs (900 g) baby potatoes, halved

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 teaspoon dried oregano or Italian seasoning

  • ½ teaspoon paprika

  • Salt & black pepper to taste

  • 1½ cups shredded mozzarella or cheddar cheese

  • ¼ cup grated Parmesan cheese

  • Fresh parsley, chopped (optional)


Instructions

  1. Preheat oven
    Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Season potatoes
    In a bowl, toss potatoes with olive oil, garlic, oregano, paprika, salt, and pepper until well coated.

  3. Roast
    Spread potatoes in a single layer on the sheet pan. Roast for 30–35 minutes, flipping halfway, until golden and crispy.

  4. Add cheese
    Remove from oven, sprinkle mozzarella and Parmesan evenly over potatoes.

  5. Melt & serve
    Return to oven for 5–7 minutes until cheese is melted and bubbly. Garnish with parsley and serve hot.


Tips & Variations

  • 🔥 Add chili flakes for heat

  • 🧄 Use roasted garlic for milder flavor

  • 🌿 Add rosemary or thyme

  • 🍟 Air fryer version available if you want
