Steps
Slice onions into 1/2-inch wide rings and separate each ring. Select a smaller and a slightly larger ring, place the smaller ring inside the larger, and press shredded mozzarella cheese into the gap between the rings.
Dredge each stuffed onion ring in all-purpose flour, ensuring even coverage. Dip floured rings in beaten eggs, letting the excess drip off. Press each ring firmly into breadcrumbs, coating completely.
Heat oil in a deep fryer or large skillet to 350°F. Working in batches, fry stuffed onion rings for 2–3 minutes per side until golden and crisp. Avoid crowding the cooking vessel.
Transfer fried onion rings to a paper towel-lined plate to remove excess oil. Serve immediately while hot for best texture.
