🧀🥕 Cheesy Veggie Sticks (Pan-Fried)

🧾 Ingredients

  • 1 medium zucchini (grated & squeezed dry)
  • 1 medium carrot (grated)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 eggs
  • 3–4 tbsp flour (or breadcrumbs)
  • 2 tbsp chopped green onions
  • 1–2 cloves garlic (minced)
  • Salt & pepper to taste
  • Oil for frying

👩‍🍳 Instructions

  1. Prep the veggies
    Grate zucchini and squeeze out as much water as possible (very important!).
  2. Mix everything
    In a bowl, combine zucchini, carrot, cheese, eggs, flour, green onions, garlic, salt, and pepper.
  3. Shape into sticks
    Take small portions and form into log/stick shapes with your hands.
  4. Cook
    Heat oil in a pan over medium heat. Fry sticks for 3–4 minutes per side until golden brown and cooked through.
  5. Serve
    Pair with a dip like garlic yogurt, ranch, or spicy mayo.
