Christmas Cloud Cake is a delicate, melt-in-your-mouth cake made without butter or oil. It has a soufflé-like texture, snowy white crumb, and a lightly sweet vanilla flavor—perfect for topping with whipped cream, powdered sugar, or fresh berries for a festive finish.


🛒 Ingredients

For the Cake:

  • 6 large eggs, separated (room temperature)

  • ¾ cup (150g) granulated sugar, divided

  • ½ cup (120g) cream cheese, softened

  • ½ cup (120ml) whole milk

  • 1 tsp vanilla extract

  • ¾ cup (90g) cake flour (or all-purpose, sifted)

  • ¼ tsp salt

  • ¼ tsp cream of tartar (or lemon juice)

Optional Toppings:

  • Powdered sugar (snowy look ❄️)

  • Whipped cream

  • Fresh strawberries, raspberries, or cranberries

  • White chocolate shavings

1️⃣ Prep the Pan

  • Preheat oven to 320°F (160°C)

  • Line the bottom of an 8-inch springform pan with parchment

  • Wrap pan tightly with foil (for water bath)


2️⃣ Make the Egg Yolk Batter

  • In a bowl, beat cream cheese + milk until smooth

  • Add egg yolks, vanilla, and ¼ cup sugar

  • Mix until creamy

  • Sift in flour + salt and gently mix until smooth


3️⃣ Whip the Egg Whites

  • Beat egg whites with cream of tartar

  • Gradually add remaining ½ cup sugar

  • Beat until soft, glossy peaks (do NOT overbeat)


4️⃣ Fold Gently

  • Fold egg whites into yolk batter in 3 batches

  • Use gentle strokes to keep the batter airy


5️⃣ Bake in Water Bath

  • Pour batter into pan and tap lightly

  • Place pan in a larger tray filled with hot water

  • Bake 50–55 minutes until set and lightly golden


6️⃣ Cool Slowly

  • Turn oven off, crack door open

  • Let cake cool inside for 30 minutes

  • Remove and cool completely to prevent collapse
